I made a crock pot version of Brunswick Stew tonight, and it was yummy.
Leftover BBQ
1lb frozen butterbeans
1lb frozen corn
2 regular size cans of diced tomatoes undrained
2 regular cans chicken broth
1lb diced refrigerated potatoes. I didn't even know such a thing existed, I found mine at Harris Teeter near where the cream cheese is.

salt and pepper to taste

I dumped all in crockpot on low for the day. The bbq I had leftover from our Christmas party, but I am guessing you could use store bought or even shredded chicken. It was really good and super easy, and of course nice to come home and just eat after being at work.
